Cheesy Pretzel Twists Recipe

Ingredients
  1. 1 and 1/2 cups (300ml) warm water, plus 9 more cups for step 5
  2. 1 packet Red Star Platinum instant yeast (2 and 1/4 teaspoons)
  3. 1 Tablespoon (20g) honey
  4. 1 Tablespoon (15g) melted unsalted butter
  5. 1 teaspoon salt
  6. 3.75 - 4.25 cups (470 - 530g) all-purpose flour + more for work surface
  7. 18-20 cheddar cheese sticks (about 4.5 inches each)1
  8. 1/3 cup baking soda
  9. 1 large egg, beaten
  10. coarse sea salt for sprinkling
  11. optional for topping: 4 Tablespoons (60g) melted unsalted butter
