Chai-Spiced Healthy Apple Oatmeal Muffins Recipe

Ingredients
  1. 1 3/4 cups whole wheat pastry flour or white whole wheat flour
  2. 1/2 cup old-fashioned oats, plus more for sprinkling on top
  3. 1 teaspoon baking soda
  4. 1/4 teaspoon salt
  5. 3/4 teaspoon cinnamon
  6. 1/2 teaspoon cardamom
  7. 1/2 teaspoon ginger
  8. 1/2 teaspoon cloves
  9. 1 cup unsweetened applesauce
  10. 3 tablespoons melted and cooled coconut oil (or olive oil or melted butter)
  11. 1/4 cup pure maple syrup
  12. 1 egg, at room temperature
  13. ¼ cup almond milk
  14. 1 teaspoon vanilla extract
  15. 1 medium SweeTango Apple, peeled, cored and finely chopped (about 1 cup chopped apple)

For the glaze:
  1. 2 tablespoons powdered sugar
  2. 2 tablespoons low fat cream cheese
  3. 1/2 teaspoon vanilla extract
  4. 1-2 teaspoons unsweetened almond milk
  5. 1 vanilla bean,
  6. split in half and seeds removed
