Chai-Spiced Healthy Apple Oatmeal Muffins Recipe
Ingredients
- 1 3/4 cups whole wheat pastry flour or white whole wheat flour
- 1/2 cup old-fashioned oats, plus more for sprinkling on top
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 teaspoon cinnamon
- 1/2 teaspoon cardamom
- 1/2 teaspoon ginger
- 1/2 teaspoon cloves
- 1 cup unsweetened applesauce
- 3 tablespoons melted and cooled coconut oil (or olive oil or melted butter)
- 1/4 cup pure maple syrup
- 1 egg, at room temperature
- ¼ cup almond milk
- 1 teaspoon vanilla extract
- 1 medium SweeTango Apple, peeled, cored and finely chopped (about 1 cup chopped apple)
For the glaze:
- 2 tablespoons powdered sugar
- 2 tablespoons low fat cream cheese
- 1/2 teaspoon vanilla extract
- 1-2 teaspoons unsweetened almond milk
- 1 vanilla bean,
- split in half and seeds removed
