Autumn Kale Salad with Sweet Potatoes, Broccoli and Brown Rice Recipe

Ingredients
SALAD INGREDIENTS:
  1. 2 medium sweet potatoes, peeled and diced
  2. 2 cups roughly-chopped broccoli florets (about 1 small head of broccoli)
  3. 2 tablespoons olive oil
  4. salt and pepper
  5. 4 cups chopped kale leaves
  6. 2 cups cooked brown rice or farro
  7. 2/3 cup dried cranberries or cherries
  8. 2/3 cup chopped toasted pecans
  9. (optional: 1/2 cup crumbled feta or goat cheese)

VINAIGRETTE INGREDIENTS:
  1. 3 tablespoons olive oil
  2. 2 tablespoons red wine vinegar (or apple cider vinegar)
  3. pinch of salt and black pepper and garlic powder, to taste
